Ingredients
- In a heavy-bottomed pot, heat the butter.
- Add the slivered onions to the warm butter. Cook over low heat for 30 minutes, or until the onions are very soft. (Avoid getting any color on the onions.) Add a small amount of water if necessary.
- Transfer the cooked onions to a blender.
- Add the remaining ingredient to the blender and puree until very smooth.

- 2 lbs Gills Yellow Onions, slivered
- ½ cup heavy cream
- ¼ cup basil pesto sauce
- 1 Tbsp salt
